Rodney's California Zucchini Bake
Wow, it's been a couple of weeks since Slowe and I posted! Time flies when you're having fun! I had a good time visiting our son and my older brother the end of last month. I got tired, and took a lot of naps, but they all understood and were just glad to see me!
Here's a recipe we haven't made for several years, but I remember it was pretty good. I got it from a guy I used to work with at the copper mine in Arizona. In fact, I think I'll put it on this week's menu!
Rodney's California Zucchini Bake
1 lb. lean ground beef
3 medium zucchini, thinly sliced
1/4 cup sliced green onion
2 tsp salt
1/4 tsp garlic powder
2 tsp chili powder
1 (7 oz.) can green chiles, diced
3 cups cooked rice
1 cup sour cream
2 cups grated Jack cheese, divided into 1 cup portions
1 large tomato, sliced
salt and pepper to taste
