It's COLD down here in Okieland. I have this wierd white stuff covering the ground that is making a mess. This is just not right. I thought I left that stuff behind. We're supposed to get another 10" tonight, so we're prepared to hang out for the weekend in the house. We don't have the equipment to deal with large amounts of snow here, so it is a real pain in the butt. Please, make it go away!!!

 

Sam got called to do speech therapy at Oklahoma Central University for a 14 week session, but due to the weather, her classes have been cancelled. We've been on the waiting list for about 2 years,and they finally called. It's a great deal. Graduate student therapists will work with her for their semester, with a licensed speech therapist overseeing it. We're all dressed up to go, but the weather closed the school. I hope she can go next week. If she does, that will mean that I'm putting 4 through college. (Actually, it's 14 weeks, twice a week, for $180. Not a bad deal!)

 

OK, here's another recipe. I'm a huge fan of clam chowder, and this is the one I think is the best Ive tried.

 

1 qt shucked clams, chopped (save the liquor) **

3 slices salt pork (or 5-6 slices bacon) chopped

2 small onions, diced

2 medium potatoes, diced (1/2" cubes)

1 bay leaf

1cup water

3 cups milk

1 1/2 cup half & half cream

1/4 cup butter (1/2 stick)

Salt & pepper to taste

 

In a pot, SLOWLY fry the pork (or bacon) until cooked, but not crispy. If you use bacon, drain the fat.

 

Add the onions and saute' until clear.

 

Add potatoes, bay leaf, and water. Simmer until potatoes are tender.

 

Add clam liquor, milk, cream, butter, and clams. Simmer for about 15 minutes, (Don't let it boil), and it's done.

 

** Now, here's a twist!! The basic recipe also works well with shrimp, crawdads, scallops, oysters, or crab. I just made it with the "fake crabmeat" and it was wonderful!

I shoveled ten inches off my deck today so I can sympathize with you.

 

I will keep my fingers crosses that you'll be able to get the speech classes in. I'll bet you will, they need to get their students x numbers of hours of client time to pass the course. The college students have been wonderful for my husband. I think the work as hard if not harder than any of the licensed speech therapists that Don had before we hooked up with the college.

Thanks for the recipe. I'm not a clam person but I do like some of the other things to make it. Using a bay leaf is great. I love them and must get a tree started. My sis has 7 trees and doesn't like them and NEVER uses them. She sure doesn't act like our mother's daughter. :uhm:

Directions for dealing w/ cold and snow:

 

#1 Don warm clothing. The clothing must be coordinated colors. You must look spiffy in them.

 

#2 Don warm boots but you will dispose of these later. See below

 

#3 Find a mountain.

 

#4 Get a pair of skiis for your feet.

 

#5 Climb the mountain to the tippy top.

 

#6 Don aforementioned skiis. This is when you take off aforementioned boots. Don ski boots.

 

#7 Go down aforementioned mountain.

 

#8 Don't hit the big plate glass window of the Chalet at the bottom of the mountain (aforementioned).

 

#9 Take skiis off and go inside and down a cup of Hot, Hot Chocolate in front of the Huge Fireplace (not aforementioned).

 

OR--Go to your own Chalet (rented for the week) and make your most delectable Clam Chowder (see your notes).

 

I am sooo glad I happened on your blog! After not being able to eat for (9) months, I am lovin' food again. I used to cook and had lots of parties just so I could cook. I don't have the energy, yet but that will come. I will try your recipe as it sounds like "a groovy repast, anything more would be a mediocrity!" Take Care. LK

I could do steps 1-3, but then have to go straight to 9. Otherwise I'd be drinking that hot chocolate in the ICU. :stretcher:
