Frito Pie
Today at lunch we had an original South Texas creation: Frito Pie. It started out in Donna, Texas sometime in the 50's or 60's. Some guy would take a small bag of Frito corn chips, cut it open and then pour in some Chili. He sold them from a little kiosk, it really caught on and evolved into a great dish with many variations. Now it is usually baked with fritos, canned or homemade chilie, cheese and onions. We had it once before, but it had mushrooms. That is a major faux pas for Frito pie aficionados.
I did get my wheelchair fixed, so I can now take Theodore out myself.
We got a temperature below zero yesterday, the first time this year. Last year we had tons of snow, now we have the cold.
